San Antonio, TX: Cruising Kitchens’ latest build is heading to the birthplace of the modern food truck scene, Los Angeles, California. The 22′ food truck will operate out of the Los Angeles Zoo and Botanical Gardens and has been fully equipped with four double basket fryers, a sandwich prep table, two burners, and a full size oven.
As the zoo continues to grow, the need for more food and beverage services has also increased. With 133 acres to explore, more than 270 different animal species to see, and over 1.8 million visitors per year, the zoo is taking proactive measures to expand their dining options.
According to LA Zoo’s General Manager, the idea of adding a food truck to the zoo grounds emerged from roadblocks in getting ”new concession locations built and adding power and running water to these areas.” Thinking creatively, the zoo came up with the idea to introduce a food truck that would be able to move in and out of these remote locations.
With the heavy amount of foot traffic throughout the zoo, the food truck will provide an additional food and beverage presence for visitors. As of now, the theme of the food truck is ”The Coup” and will offer hand breaded chicken tenders, Nashville hot chicken sandwiches, waffle fries, and desserts to hungry customers. The zoo’s Regional Executive Chef states that they plan on ”changing the food concept up as they go” and listening to and adjusting to the public’s response to the menu.
Going mobile is a resourceful and cost effective solution to LA Zoo’s needs. Instead of waiting on the construction of multiple concession sites, the zoo will be able to cater to many locations with one food truck. Additionally, the extensive amount of kitchen appliances and equipment available gives the zoo flexibility when it comes to choosing their menu items. Unlike a traditional brick and mortar restaurant, LA Zoo can use the food truck to experiment with various food concepts and alter them as needed.
While the food truck will primarily be parked in the zoo for day to day foodservice, it will also be utilized for catering events, local movie nights, music festivals, and various events that happen in the surrounding Griffith Park area.
